- Split the vanilla bean. Pour the milk, the cream and the vanilla into a saucepan, and let it boil.
- Blanch the yolks with the sugar, pour the milk over this mixture and mix.
- Pour back into the saucepan and cook until the mixture coats the spoon.
- Pour into a dish and set aside in the refrigerator for 24 hours.
- The next day, remove the vanilla bean, place it in an ice cream maker and leave to set in the freezer.
