A sweet mousse made with 66% dark Caribbean Valrhona chocolate. An airy texture, with whipped cream and powdered sugar, decorated with Chocolatree’s “un brin d’amour” decorations for sweet desserts filled with love. To be enjoyed chilled!

Step by step
- Melt the chocolate in a bain-marie
- Meanwhile, boil the cream and pour it over the melted chocolate, and keep mixing with a whisk
- Add the butter at room temperature, cut into pieces, and mix until properly incorporated
- Separate the egg whites from the yolks. Whisk the egg whites until stiff, and add the sugar gradually
- Add the egg yolks to the chocolate mixture and whisk until smooth
- Incorporate the egg whites gradually using a spatula, be careful not to break them. For an even more sensational taste, it is possible to add some hazelnut chips previously roasted with a little fleur de sel
- Pour into ramekins or glass jars, and grate a few hazelnuts on top. Leave to set for at least 2 hours in the refrigerator.
- Make a whipped cream by whipping the whole liquid cream with the powdered sugar until firm
- Add a dash of whipped cream on top of the mousse and decorate with Chocolatree « Un brin d’amour» decorations before enjoying it chilled!
