Spread an even layer of tempered chocolate on a relief sheet. When the chocolate starts to crystallise, use a cookie cutter to cut out the shapes that you will use as decorations (if not, you can cut out the shapes after crystallisation with a heated cookie cutter). For best results, it is advisable to press the shapes into a flat surface. Then place in the fridge at 4°C to 6°C for 30 minutes or leave to crystallise overnight at 16°C.

Spread an even layer of cold jelly (about 4°C) on a relief sheet.
For best results, it is advisable to press the jelly onto a flat surface. You can use a cookie cutter to cut out the shapes you want to use as decorations (or you can cut out the shapes after freezing with a cookie cutter). To ensure a neat cut, place your jelly in the freezer for a few minutes. Remove the relief sheet.
